This is probably my favourite and the simplest 30 minute meal I've ever made.
I was first introduced to this by my friend, who raved extensively about how easy and delicious it was. And boy, was she right. It was so good I made it every single day the week I learned the recipe.
It takes only 5 minutes to prepare and you even have time to take a shower while waiting for the salmon to bake.
Multitasking at its very best, if I must say so myself.
I know that it might not look the most presentable, but trust me - the pesto and seed mustard blends into this beautiful, out-of-this-world flavour. Combined with the perfectly moist, melt-in-your-mouth salmon (that seems so hard to reproduce when using a pan)? Fool proof guide to heaven.
Now for the recipe...
1. Preheat oven to 375F
2. Mix one teaspoon of pesto + one teaspoon of seed mustard
3. Spread it on top of the salmon
4. Bake for 15 - 20 minutes depending on the size of your salmon
PS - If you're lazy? You can even line your pan with aluminium foil, that way you don't even have to worry about cleaning afterwards.
