30 minute meals: Tartine Brunch

I don't understand people who order avocado toast at a restaurant - why pay $10 when you can make it yourself in under five minutes and at a fraction of the price?  It is god awfully simple -

1. Toast a slice of bread
2. Cut open a ripe avocado, spread generously over thick crusty bread
3. Add a dash of sea salt and top with the sunniest of eggs
4. If you're feeling adventurous, add a squeeze of lemon and a sprinkle of red pepper flakes.

I got bored with just straight up avocado this weekend, so I paired my avocado toast with an equally easy herb buttered mushroom tartine and tied it all together with a side of ripe, blistering tomatoes.

A tartine Sunday is a happy Sunday in my books.

For other tartine options - check out my last post here for three other options.
(1) Smoked duck breast with figs
(2) Avocado and shrimp
(3) Goat cheese and honey
