As promised, here's a quick meal that will get you in and out of the kitchen in 30 minutes. Personally, I think this recipe works better with orzo as there's less surface area for the tomatoes to cover.
- Boil orzo/orecchiette
- Sauté the shrimp (in kitchen noob's terms: heat oil on a pan and add shrimp). Add salt and all purpose seasoning for taste.
- Remove shrimp from the pan and add cherry tomatoes to heated pan until they've blistered. (No need to clean the pan between removing the shrimp and adding the tomatoes. This way the tomatoes will soak up all the flavors from the shrimp)
- Add shrimp and orzo/orecchiette to the pan and mix until the tomatoes juices have coated the pasta
- Top with avocado and enjoy!
Tip - Get the deshelled and deveined shrimp to maximize efficiency.
