30 minute meals: Potato nests with smoked salmon, sour cream and dill


Before we start propelling into the holidays season and you find yourself reaching for that same bottle of wine to bring to your ugly sweater themed potluck, I thought I'd share an appetiser that is equal parts presentable and equal parts simple.  These little potato nests topped with smoked salmon, sour cream and dill look so fancy no one will realise that just this morning you went through three eggs just to crack one open without dropping any eggshell crumbs. 

Ingredients:
Frozen shredded hash browns (or potatoes)
Sour cream
Smoked Salmon
Dill

Recipe:
1. To create the potato nest, spray a mini muffin pan with cooking spray and line it with frozen shredded hash browns. Use your fingers to press the potatoes down and towards the side of each muffin hole, creating a nest. (*Alternatively, if you can't find these shredded hash browns, simply boil a potato until mostly cooked through and shred it yourself.)
2. Set your oven to 400F and bake potato nests for 15 - 20 minutes until golden brown.
3. Once potato nests are done, remove them from the muffin pan, add a dollop of sour cream and a sliver of smoked salmon and dill.
